Recipe: Lemon Coolers (cookies, from scratch)

LEMON COOLERS

1/2 cup butter, at room temperature
1/3 cup sugar
1/2 teaspoon vanilla extract
1 egg
Zest of 1 lemon
Juice of half a lemon
1/4 cup flour

Preheat oven to 350 degrees F. Line cookie sheet with parchment paper.

Cream butter and sugar until smooth. Add vanilla, egg, lemon zest and lemon juice. Add flour and stir until batter is well blended. Spoon rounded teaspoons of dough onto the cookie sheet, placing mounds about 3-inches apart.

Bake about 15 minutes until each cookie has a golden-brown edge. The cookies are very thin and delicate, so watch them carefully. Remove cookie sheet from the oven and let the cookies cool 5 minutes. Then, use a metal spatula, transfer to a metal rack to cool completely.

Store cookies in an airtight container at room temperature.
