Recipe: Lemon Pudding, Lemon Cream Pudding, and Lemon Pie filling (4)

LEMON PUDDING

1 1/4 cups sugar
3 tbsp. cornstarch
1/4 cup lemon juice
1 tbsp. grated lemon rind
3 egg yolks, slightly beaten
1 1/2 cups boiling water

Cream sugar, cornstarch, lemon juice and lemon rind in large pot. Add egg yolks. Gradually add hot water, stirring constantly. Boil 4 minutes and pour into dishes or pie shell.


LEMON PUDDING

3 lemons
3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
3 egg yolks
Salt
2 tbsp. butter

Use a paring knife or vegetable peeler to remove the yellow zest in strips from 2 of the lemons. Squeeze 1/2 cup juice from the lemons.

In a medium saucepan, combine sugar and cornstarch. Stir in milk until smooth. Add zest to the pan. Stir in yolks and 1/8 teaspoon salt. Bring to a boil over medium heat, stirring constantly. Boil, stirring, 1 minute. Remove from heat.

Add juice and the butter. Pour through a sieve. Discard zest. Chill until ready.

Servings: 4


LEMON CREAM PUDDING

1/3 cup flour
1/3 cup cornstarch
3 cups hot water
1 tsp. salt
1 1/2 cups sugar
1 cup heavy (whipping) cream
1 tsp. vanilla
3 lemons (Juice from 3 lemons and Grated rind from 2 lemons).

Dissolve flour and cornstarch in a little cold water, stir into 3 cups of hot water, boil until clear.

Add salt, set aside to cool, stir occasionally.

Grate rind and squeeze juice of lemons, add sugar, mix well and add to cornstarch mixture when just warm. Chill wel.

Add cream which has been whipped and sweetened slightly, flavor with vanilla.

Servings: 10 to 12


LEMON PIE FILLING

1 cup granulated sugar
1/4 cup cornstarch
1 1/2 cups cold water
3 eggs, beaten
Grated rind of 1 lemon
1/4 cup lemon juice, fresh is best
1 tbsp. butter or margarine
1 1/2 cups Cool Whip, thawed

In large kettle (not aluminum), mix sugar and cornstarch. Mix in 1 1/2 cups cold water and while stirring, heat a bit.

Continue stirring constantly and add eggs; cook until bubbly and thick. Remove from heat.

Add lemon juice and rind and butter. Cool completely then fold in Cool Whip.
