Recipe: Gorgonzola Cream Sauce (2)

GORGONZOLA CREAM SAUCE

3 cups cream
2 tablespoons Brandy
1 tablespoon Thyme leaves, roughly chopped
2 teaspoons Dijon mustard
2 ounces Gorgonzola cheese, crumbled
Salt and black pepper to taste

Combine all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 10 minutes. Check for seasonings and adjust as necessary.

GORGONZOLA CREAM SAUCE

2 cups heavy (whipping) cream
2 oz sweet Gorgonzola cheese, crumbled
3 tablespoons fruity Italian white wine
1 teaspoon Cognac or other brandy, optional
Salt and ground white pepper
Freshly grated nutmeg

Combine all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 10 minutes. Check for seasonings and adjust as necessary.
