Recipe: Quickest BLT Melts

Sandwiches
QUICKEST BLT MELTS

6 English muffins
1 large ripe tomato (for 6 slices)
condiments of choice
6 slices Swiss cheese
18 slices already cooked bacon
6 lettuce leaves

Turn on the broiler to high.

Cut the muffins in half and place them cut side up on a cookie sheet. Place them under the broiler and toast until lightly brown, about 2 to 3 minutes. Toast the other side if desired.

Meanwhile core and cut 6 slices from the unpeeled tomato.

Remove the muffins from the oven. If desired, spread the muffins with condiments of choice such as mayonnaise or mustard. Place the tomato and cheese slices on half of each sandwich.

Cut the bacon slices in half. Divide the bacon evenly, placing the slices on opposite sandwich halves.

Return the cookie sheet to the oven and broil 1 minutes, or until the cheese melts and the bacon crisps. Remove the sandwiches from the oven. Blot the bacon gently with a paper towel if necessary.

Place a lettuce leaf on each sandwich, close the halves, and serve at once.

Makes 6 sandwiches
