Lemon Yogurt Pound Cake
2 1/4 cups sifted all-purpose flour
1 1/4 cups sugar
1 tsp. salt
1/2 tsp. baking soda
1 1/2 tsps. grated lemon peel
1 tsp. vanilla
1 cup shortening
1 container(8 oz.) lemon yogurt
3 eggs
Preheat oven to 325.
Put all ingredients into large mixing bowl and blend at low speed. Beat for 3 minutes at medium speed.
Pour batter into a greased and floured 10-inch tube pan.
Bake at 325 for 65 to 75 minutes or until toothpick inserted in center comes out clean.
Cool cake 30 minutes in pan or a rack, remove from pan, and cool completely on a rack. Sprinkle wiith confectioners sugar.
