Recipe(tried): Mondo's Oatmeal Pie

I used to live in Iowa City, and absolutely LOVE Mondo's Oatmeal Pie! I got the recipe from a grandmother of a friend of mine, who got it from the staff at the Mondo's in Des Moines (when it was there). The original recipe made 10 pies -- I converted it to 1. I think it is actually better than what they serve now in the restaurants!

MONDO'S OATMEAL PIE

3 eggs
1 stick (1/2 cup) butter, softened
3 tablespoons vanilla
1 cup white granulated sugar
1 cup brown sugar, firmly packed
1 cup rolled oats, uncooked
1 unbaked regular pie crust (not graham cracker)

Preheat oven to 300 degrees F.

Mix eggs, butter and vanilla together. Add granulated and brown sugars; stir to blend. Mix in oats. Pour into pie shell.

Bake for 1 hour and 15 minutes.

Serve warm with cinnamon ice cream! :)
