This is a recipe from an Inn near Manchester, England. Although it does not have prawns in it, they certainly could be added. Let me know what you think:
Lobster Stuffed Chicken Breasts with Fruit Sauce
Source: Moorcock Inn, Halifax Road, Littleborough, Rochdale, OL15 OLD
Along the road to Blackstone Edge there stands a little pub - so starts a poem written in the 1920's. In fact the Inn was originally Swainrod Farm and seems to have been first licensed in about 1840. Although the building dates back to around 1641, there is little known about its history.
Lobster Stuffed Chicken Breasts:
2 1/2 lbs fresh lobster
4 boneless chicken breasts, skinned & flattened
1/4 cup scallions (chopped)
1 cup water chestnuts (chopped)
1/2 cup broccoli (chopped)
1/2 cup mushrooms (chopped)
1 recipe sauce (see below)
a small amount of flour/milk for coating
Sauce:
1/4 cup peach or apricot preserves
1/2 cup brown sugar
2 tbsp apple cider vinegar
2 tbsp soy sauce
1/2 tsp dry mustard
1/4 tsp garlic powder
Cook and pick your lobster. Mix the lobster meat, scallions, chestnuts, broccoli and mushrooms together. Place in the middle of a flattened chicken breast and roll up. Secure with a toothpick.
Mix a small amount of flour/milk until smooth and dip each chicken roll into the batter, coating the roll.
To make the sauce combine all ingredients in a saucepan and cook until smooth.
Fry in oil until golden brown. Serve topped with 1 recipe of sauce.

Although the building dates back to around 1641, there is little known about its history. The Moorcock was the old gamekeepers name for the red grouse, which are unique to Britain. The owners have tried to restore some of the original character, the flags in the main bar were uncovered during restoration and are believed to date back to 1641 along with the main arch leading to the restaurant.
The Moorcock Inn is situated on the main Manchester to Halifax road at the foot of the Pennines. We are featured in the Good Pub Guide 2001: 'Friendly and unpretentious family run pub with great views over the Manchester area.'
