Recipe(tried): London broil can also be broiled if good

Misc.

quality. Here is a recipe we enjoy. Hope it helps!
London Broil
1 1/2 lb London Broil (good quality)
seasoned salt
seasoned pepper
2 medium tomatoes
bottled Italian dressing
6 large mushrooms

Preheat broiler. With sharp knife, score* both sides of the steak;place on rack
in broiling pan.
Sprinkle steak with seasoned salt and pepper. Cut tomatoes in half.
Brush tomatoes with Italian dressing and arrange cut side up around steak;
Broil 5 minutes. Meanwhile wash and slice mushrooms.
With tongs, turn steak;sprinkle with seasoned salt and pepper. Arrange mushroom
slices in overlapping rows on broiler rack; brush with Italian dressing. Broil
the steak 5 minutes more for rare or 6 minutes for medium. To check the
doneness, with a knife, make a small cut in center of meat.
With knife in slanting position, carve thin slices across width of steak.
Serve slices with broiled vegi's. Spoon drippings over if you like...(is good!!)
** To score you take a sharp knife and make diagonal slices about 1/8 inch or
less into the meat...creating a design that looks like one created by a grill.
This helps tenderize the meat and also helps the seasoning to penetrate.

From GH Illustrated Cookbook...one of my favorites! You can also marinate the
London Broil with your favorit marinade before broiling...I have never baked it
so I can't help you there, sorry. However the time seems sufficient.Good Luck
Pat
