Low-Fat Banana Walnut Cake
Source: The John Hopkins Complete Guide For Preventing and Reversing Heart Disease
Yield: 12 Servings

2/3 cup banana; mashed
1/3 cup margarine
6 egg whites, large
3/4 cup water
2 cups flour, unbleached
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 cup walnuts
1/2 cup raisins

Preheat oven to 350 degrees. In a mixing bowl, beat together mashed bananas and margarine until creamy. Add egg whites and water. Beat well. Stir in flour, baking powder, baking soda, and cinnamon. Beat until smooth. Add walnuts and raisins.

Spoon batter into a 9 x 13-inch baking pan, sprayed with vegetable oil spray. Bake 20 minutes or until a knife inserted comes out clean. Cool and cut into 3 x 3-inch squares.

Rer serving: total fat 7.5 gm, cholesterol 0 mg, calories 178, saturated fat 1.0 gm, carbohydrate 2.4gm, protein 5 gm
