Recipe(tried): Low Fat Cole Slaw with Cottage Cheese Dressing (using fruit)

LOW FAT COLD SLAW

This makes a large quantity and can be expanded or reduced easily.

Shred 1 small head of cabbage.
Grate 1 carrot.
1/4 cup raisins
1/4 cup dried cranberries
1 large can crushed pineapple drained
Chop 1 large or 2 small bananas and 1 apple, soak in the pineapple juice
1 small can peaches, drained
Sections of 1 orange

Drain the bananas and apples reserving the juice. Mix all of the above.

In a blender or food processor, blend 1 carton of low fat or no fat cottage cheese with the grated peel of 1 orange, adding the reserved juice to make a smooth dressing.
Add to the fruit and vegetable mix and serve.

This is great for people who say they don't like cabbage.
