LOW FAT HONEY CAKE
1 3/4 cups honey
1 cup strong coffee
1/2 cup currants, or raisins
3 tablespoons brandy
1 1/4 cups brown sugar, packed
1 cup egg substitute (like Egg Beaters)
1/4 cup applesauce
3 1/2 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1 tablespoon grated orange zest
In a saucepan, combine the honey and coffee, bring to a boil and cool. Meanwhile, soak currants in brandy.
Preheat the oven to 350 degrees F. Coat 2 (9x5-inch) loaf pans with nonstick cooking spray.
In the bowl of an electric mixer, blend the brown sugar, egg substitute and applesauce; set aside.
Combine the flour, baking powder, baking soda, salt and spices. Stir the dry ingredients alternately with the coffee into the egg mixture. Fold in the currants and orange zest. Pour the batter into prepared pans.
Bake for 1 hour; the top will be sticky, but a toothpick inserted into the center should come out clean.
