8-2-99 Lunchbox Recipes Part 4 (10 Recipes)

Hummus Lunch

1/2 c Finely Chopped Green Onions
1/2 c Finely Chopped Green Pepper
3 tb Chopped Fresh Parsley
1 tb Sesame Seeds
1 tb Mayonnaise
1/2 ts Garlic Powder
1/8 tb Red Pepper
1/2 ts Mint Flakes
1 can (15 Oz.) Garbanzo Beans (Rinsed & Drained)
4 (6 Inch) Whole Wheat Pita
Bread Cut in Half Crosswise
1/2 c (2 Oz.) Monterey Jack Cheese
1 med Tomato, Cut Into 8
(1/4 Inch) Slices
2 c Alfalfa Sprouts

Combine green onions, green pepper, parsley, sesame seeds, mayonnaise, garlic powder, red pepper & mint flakes in a 1-quart casserole. Cover with plastic wrap & vent. Microwave at high for 3 min. Place this Mixture & garbanzo beans in processor. Process 1 min. Or until smooth. Spoon about 1/4 bean mixture (hummus) into each pita half; top with 1 t. Cheese. Cover with paper towels & microwave at high for 1 min.
Cut Tomato Slices in Half. Open Sandwiches & Place 2 Tomato Slice Halves & 1/4 C. Alfalfa Sprouts Into Each Sandwich Half. Serve cold.

Tuscan Ham & Cheese Sandwich

2 slices of your favorite bread
2 oz cooked ham
2 slices Provolone Cheese
pesto and/or mayonnaise

Spread 2 slices sourdough or Italian bread basil pesto.

Layer slices of smoked cooked ham, sliced provolone cheese, and thinly sliced Roma tomatoes. Dawn.NY (5:23:23 PM) :

1 can Tomato paste 1/4 cup Raw onion (chopped)
1 can Tomato sauce
1 Clove garlic (chopped) 3 cups Water
2 pints Oregano 3 pints Cooking oil
1 pint Brown sugar

Combine ingredients in a 2 qt sauce pan and cook for 30-40 minutes. Makes enough sauce for 5 12" pizzas.

Tex-Mex Pizza Sauce
(Does this look familiar, Terry?)

2 cups canned tomatoes -- pureed
1 (10 oz) can enchilada sauce
1 teaspoon ground cumin
1/2 teaspoon oregano (preferably Mex)
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 teaspoon lime juice
pinch sugar

Combine all ingred. in small saucepan. Bring to a boil; reduce heat and simmer until reduced by half, about 30-40 min.Fran,.ME (5:54:49 PM) :

Zippy Tuna Sandwiches

6 1/2 can tuna (water packed), drained and broken into chunks
1 hard-cooked egg, chopped
1/4 cup chopped dill pickle
1/4 cup chopped red onion
2 Tbsp lowfat mayonnaise
1 tsp prepared mustard
s and p to taste

Mix ingredients gently. Serve in pita pocket with lettuce.Debbie.D.,.AL (8:20:52 PM) :

CUCUMBER SANDWICHES LIKE MY MAMA USED TO MAKE

Flatten thin-sliced white bread with a rolling pin and cut it in rounds. On each round, spread some butter. Put a thin slice of peeled cucumber on the butter, sprinkle fresh chopped dill on top of the cucumber slice. Put another buttered round on the top. So good and so easy! Debbie.D.,.AL (9:14:21 PM) :

ARTICHOKE PASTA SALAD

12 oz. bow tie pasta
6 oz. pitted ripe olives, sliced
8 oz. can artichoke hearts, chopped
8 oz. mozzarella cheese, cubed
1 clove garlic, minced
1/4 cup fresh basil, chopped
1/2 tsp. thyme
1/4 cup Parmesan cheese
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 tsp. salt
1/8 tsp. pepper

Cook pasta according to package directions. Drain, cool, and set aside. Place dressing ingredients in a blender/food processor and blend well. Gently toss salad mixture with salad dressing and chill.
Serves 8 to 10.

BANANA CHOCOLATE CHIP COOKIES

1 stick butter
1 cup brown sugar
2 eggs
1 tsp. vanilla extract
3 bananas, mashed
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
12 oz. pkg. chocolate chips

Mix all ingredients together in order listed and drop by teaspoonfuls onto a greased cookie sheet. Bake at 375 degrees for 8-10 minutes.

These are great to put in lunchboxes. Kids old and young love them!

Applesauce Rye Bread, from the Bread Machine Cookbook (adapted)

1 cup applesauce
1/4 to 3/8 cup water plus 1 tablespoon
2 tablespoons molasses
1/2 tsp. salt
2 tablespoon butter
2 and 3/4 cup bread flour
1 cup rye flour
3 tablespoons gluten
1 tablespoon caraway seeds
2 to 2 and 1/4 tsp yeast

Place ingredients in bread pan according to your machine. Makes a 1 and 1/2 lb. loaf. Select light crust setting. I like to take this bread and longhorn or brick cheese to lunch, along with a salad. This recipe is slightly changed from the book. Debbie.D.,.AL (10:26:43 PM) :

GRANDMAMA'S ORANGE COOKIES

4 1/2 cups all-purpose flour
1 tsp. baking soda
1 cup shortening
2 cups sugar
3 eggs
juice and rind of 3 oranges--equal to 1 cup
1 cup buttermilk

Combine flour, and baking soda and set aside. Mix together shortening, sugar, and eggs and mix well. Stir in orange rind and juice. Add flour mixture and buttermilk, beginning and ending with dry ingredients. Drop by teaspoonfuls onto lightly greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cool on wire rack and frost with orange frosting.

ORANGE FROSTING

1 stick butter
juice and rind of one lemon
1 box powdered sugar

Cream frosting ingredients together until smooth. If mixture is too stiff ad a little more orange juice. Frost cookies after they're completely cooled.

These are made at Christmas when oranges are at their freshest!
