DEVILED HAM SPREAD

1 lg. can of Underwood Deviled Ham
2 T. finely chopped onion
1 cucumber, peeled and finely chopped
Mayonnaise to moisten

Mix all the ingredients together and serve on any kind of bread that you wish.

Engadine Torte

A French standard. Caramelized nuts in a tart crust. This tart slices neatly and keeps fresh or frozen very well. I make mine with whole pecans instead of the traditional walnuts. If this is your first
time caramelizing sugar, relax. It won't hurt a bit.

Pastry:
1 cup unsalted butter
2 3/4 cups all-purpose flour
1/2 teaspoon salt
1 egg
1 egg yolk
2 to 4 tablespoons cream

Filling:
2 1/2 cups sugar
1 cup whipping cream (not whipped)
2 1/2 cups whole pecans (or walnuts) - chopped
1/2 teaspoon pure vanilla

To make tart dough, place flour and salt in a food processor. Add butter in chunks and pulse to break or cut butter into flour. Add egg, yolk and cream and process until dough just holds together. Knead briefly on a lightly floured board. Pat into a disc and wrap in plastic and chill for an hour or more.

For filling, place the sugar in a 3-quart heavy bottomed saucepan (this is where quality like that of All-Clad really counts). Over low heat, let the sugar just sit until it begins to turn liquid. It will become clear and liquid. Raise the heat to medium for a minute at a time if the process seems too sluggish. Let sugar dissolve and become amber in color (10-15 minutes). Stir with a wooden spoon if you like. Once it is deep amber, remove from heat and add the cream all at once (carefully). Stir in nuts and let mixture cool completely.

Roll out two thirds of the tart dough to line the bottom and sides of 9 or 10 inch tart pan. Patch any holes. It is easier to roll out tart dough on floured parchment paper. Roll remaining portion and set aside or chill until needed.

Preheat oven to 350 F.
Pour cooled nut filling into prepared tart shell. Gently lower rolled top portion on top and crimp or seal sides. Paint top with a beaten egg yolk. Do not cut steam vents. Place tart on a baking sheet lined with parchment paper. Bake for 45 to 55 minutes until nicely browned. Cool well before serving.

What we like to do for a picnic sandwich, is get a long loaf of Italian bread, split it, and spread mayo on both sides. Then, on the bottom, I also spread a little bit of hot honey mustard. Then, we layer ham, hard salami, baloney, different cheeses, shredded lettuce, onion, thinly sliced tomatoes, a little oregano, some pickles, close it, wrap it up, and store it in the frig for a couple of hours, then slice off pieces to eat. Delicious.

I have three of those Tupperware/Rubbermaid round, divided containers. I just got through filling each and every compartment with a salad fixing: tiny sweet pickles, cucumbers, tomatoes, baby carrots, marinated artichoke hearts w/mushrooms, pickled okra, green olives, black olives, boiled eggs, baby corn, etc.

Then I washed, shredded and dried iceberg lettuce and Romaine...I wrapped these in paper towels and put them in a gallon zip bag. Tah-dah! Instant salad bar...you can top with croutons, sunflower seeds, bacon bits, etc.

If you keep fresh salads on hand, you'll probably eat more "good food"....like I'm a fine one to talk. ;0)

All-American Club Wrap

From: Pillsbury Burgers, Wraps and Sandwiches Cookbook

I haven't tried this yet!

8 slices bacon
4 flour tortillas
1/2 cup purchased bacon dip
8 lettuce leaves
1/2 pound thinly sliced deli cooked turkey breast
1 large tomato, seeded and chopped

Cook bacon until crisp. drain on paper towel; crumble and set aside.

Spread each tortilla evenly with bacon dip to within 1/2 inch of edges. layer lettuce, bacon, turkey, & tomato onto each tortilla; Roll up.

Pepperoni Pizza Wraps
Recipe by: Pillsbury Burgers, Wraps and Sandwiches cookbook

1/2 cup pizza sauce
4 flour tortillas
4 oz shredded mozzarella cheese
1/2 pkg. pepperoni slices

Heat oven to 350 degrees. spread pizza sauce evenly over tortillas to within 1 inch of edge. Sprinkle each evenly with cheese. Arrange 1/4 of the pepperoni slices down center of each tortilla. Roll up each tortilla; wrap each in foil. Bake at 350 for 10-15 minutes or until thoroughly heated and cheese is melted.

Hot Dog Crescents
Serving Size : 8

1 package hot dogs
1 package crescent rolls
4 slices American cheese

Make a slice lengthwise on hot dog. Stuff with 1/2 a slice of cheese. Wrap with a crescent roll, starting at the long end. Bake at 350 degrees for 12-15 minutes or until golden brown.Susan,IL (3:42:30 PM) :

Hanky Pankies

1 pound ground chuck
1 pound bulk sausage
1 teaspoon garlic powder
1 teaspoon oregano
1 pound Velveeta cheese -- cubed
1 loaf party rye bread

Brown chuck and sausage together; drain well. Add garlic powder and oregano. Cook over low heat, stirring in cheese until cheese is melted. Spread mixture on bread slices.

8 slices turkey breast -- cooked
4 whole flour tortillas
1 large tomato -- thinly sliced
1 cup carrot -- shredded
1 cup lettuce -- shredded
2 ounces cheddar cheese -- shredded
1/4 cup ranch salad dressing
Place 2 slices turkey on each tortilla; layer with tomato, carrots, lettuce
and cheese. Drizzle with salad dressing. Roll tightly, slice and serve.
