MACADAMIA NUT BRITTLE
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
3/4 cup whole macadamia nuts
1/2 cup chopped macadamia nuts
1 tablespoon butter or margarine
1/2 teaspoon vanilla extract
1/8 teaspoon baking soda
Butter 15x10x1-inch jelly roll pan.
Combine first 3 ingredients in a large saucepan. Cook over medium heat, stirring constantly, until sugar dissolves. Cover and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan.
Add whole and chopped macadamia nuts; cook until mixture reaches hard crack stage or candy thermometer registers 300 degrees F, stirring occasionally.
Remove from heat. Stir in butter, vanilla, and soda.
Working rapidly, pour mixture into prepared jelly roll pan, spreading thinly. Let cool completely.
Break into pieces. Store in an airtight container.
