Recipe(tried): Macayos Baja Sauce (Jalapeno Cream Cheese)

My wife LOVES the Baja sauce and I have been working on this for quite some time. I have a good copy if not BETTER!!!

Baja Sauce (Jalapeno Cream Cheese) like Macayos

You can decide on just how much or little you want to make.

I start with a standard
Bechamel Sauce (click here).
Once I have that I add:
cream cheese
Monterey Jack cheese
chopped roasted chilies
a bit of cumin and cinnamon to taste

If it gets too thick you can use some Chicken Stock to thin it out and add more cheese if it's too thin. You can add some pressed garlic if you like as well.

It's not rocket science - once you make it a few times you will get it wired. It saves well in the fridge too. Just heat it up!!!!

P.S. - DON'T MICROWAVE IT! Stove top only!
