Recipe: Bahama Mama Marinade (using orange juice, pineapple juice and rum)

"In the late 1990s, I spent a lot of time in the Bahamas, where I fell in love with the tropical cocktails, fresh fish, and white beaches. Of all the drinks, my favorite was the Bahama Mama - a combination of citrus juice, pineapple juice, a touch of coconut rum, and maraschino cherry juice. They say this drink is the most fun you can have with your clothes on. Since my food is already naked, I say it is the most fun way to "dress" your food before it hits the grill - paper umbrellas are optional!"
Juice and zest of 1 large lemon
1 cup fresh orange juice
Zest of 1 orange
1 cup pineapple juice
1/2 cup dark rum
1/4 cup coconut rum
3 tablespoons cherry kirsch or maraschino cherry juice
2 tablespoons grenadine
1 tablespoon sugar
1 teaspoon fine-grain sea salt
1/4 cup almond or extra-virgin olive oil
In a small nonreactive bowl, whisk together all the ingredients. Mix until well blended.
The marinade will keep, tightly covered, in the refrigerator for up to 2 days.
Makes about 3 1/4 cups
