Recipe: Mango Crumb Cake

MANGO CRUMB CAKE

2 cups flour
1 cup sugar
3 tsp. baking powder
1 tsp. salt
1/2 cup butter, softened
1/2 cup milk
1 egg, beaten
1 tsp. vanilla
1 cup mango; chopped*

Preheat oven to 350 degrees F. Grease and flour a 9-inch square baking pan.

Combine flour, sugar, baking powder, and salt together to form crumbs. Reserve 1/2 cup for topping.

Add butter, milk, egg and vanilla to remaining crumb mixture. Mix well. Put in prepared pan. Spread chopped mango over top. Cover with reserved crumbs.

Bake at 350 degrees F for 40 minutes.

*I tossed the juicy cut up mango with a little cornstarch (Maybe 1/8 to 1/4 teaspoon).
