Marinara Sauce
Ingredients:
2 cups Spanish onions, diced
1/4 cup low-sodium fat-free chicken broth
1 1/2 teaspoons garlic, chopped
1/2 cup red wine
4 pounds canned chopped tomatoes
1 tablespoon olive oil
2 tablespoons maple sugar
2 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons Italian parsley, chopped
dash of salt
Directions:
1. Saut onions in chicken broth over medium heat until caramelized, about 15 minutes, adding broth as needed.
2. Add garlic and saut an additional 5 minutes. Add red wine and reduce by half.
3. Add tomatoes, olive oil, and maple sugar, simmer 30 minutes. Add herbs and salt. Note: For smooth marinara, puree sauce with a blender.
Yields: 8 cups (2 quarts or 1/2 gallon)
