Recipe: Pepper Bean Salad with Lime-Cilantro Dressing

PEPPER BEAN SALAD
" A tasty variation for a bean salad."

1 (15 ounce) can garbanzo beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1/2 cup diagonally cut celery, 1/4-inch slices
1 cup finely diced red bell peppers
1 cup finely diced green bell peppers
1/2 cup diced red onion

FOR THE DRESSING:
2 tablespoons cider vinegar
2 tablespoons lime juice
1 1/2 tablespoons olive oil
2 1/2 teaspoons Durkee Lime Pepper Blend
1/2 teaspoon Durkee Minced Garlic
1/2 teaspoon Durkee Ground Cumin
1/4 cup chopped fresh cilantro

Combine beans, celery, peppers and red onion in a large bowl.

Whisk together vinegar, lime juice, olive oil, lime pepper, garlic, cumin and cilantro in a small bowl.

Pour dressing over bean mixture; stir well to combine.

For best results, chill at least one hour before serving to blend flavors.

Makes 6 servings
