Recipe(tried): Marinated Chicken Gyro Wraps, Mixed Fruit & Lime Mojitos

I love to browse thru recipe books and get inspired for our weekly meals. One of my favorite cookbooks is The Deen Brothers Cookbook which truly demonstrates that "the apple does not fall far from the tree", in this case, their mother, Paula Deen. The boys have a good cookbook filled with delectable recipes and pictures.

The picture of the chicken gyros wrap sent me straight to the grocery store to get pita wraps and a cucumber to make this meal today. So this morning after enjoying a breakfast of scrambled eggs with ham & cheese, my "fabulicious" Morning Potatoes, toast, coffee and fruit with my husband...I started marinating the chicken tenders for tonight's yummy dinner!

One of the neatest things of this recipe is that it calls for fresh dill and oregano and those two herbs are growing on my back porch! Because of that herb pot out there, I look for recipes that use fresh herbs...thus dessert tonight, Minted Mixed Fruit, uses fresh mint. The mint also comes in handy when making my favorite drink, Lime Mojitos. I will also include that recipe in here because cooking with a drink in hand makes it more fun!!

MARINATED CHICKEN GYRO WRAPS

serves 4

FOR THE CHICKEN:
1 1/2 lbs. chicken tenders
2 Tbsp. olive oil
1 clove garlic, minced
1 tsp. fresh oregano, minced
3/4 tsp. ground cumin
salt and fresh ground black pepper to taste

FOR THE YOGURT-DILL SAUCE:
1 cup Greek style yogurt or plain yogurt
1/4 cup finely chopped red onion
1 or 2 cloves garlic, minced
1 1/2 Tbsp. fresh chopped dill
2 tsp. fresh squeezed lemon juice
salt and pepper to taste

FOR SERVING:
4 pita wraps, warm
1 cup shredded lettuce
1 cup chopped tomato
1/2 cup sliced cucumber

In a large bowl, place the chicken, oil, garlic, oregano, cumin, and salt and pepper, toss to coat. Cover with plastic wrap and refrigerate 1 hour.

In a small bowl, stir together all the ingredients for the yogurt-Dill sauce. Chill until ready to use.

Preheat the broiler. Spread the chicken tenders on a baking sheet. Broil 6 inches from heat about 8 minutes or until cooked though.

To serve, spread each pita with some of the yogurt-dill sauce, divide the chicken, lettuce, tomato, and cucumber evenly among the pitas. If desired top with additional sauce. Roll up and wrap in aluminum foil and serve.

MINTED MIXED FRUIT
serves 4

1/2 cup sliced strawberries
1/2 cup cubed fresh pineapple
1/2 cup cubed papaya
1/2 cup sliced kiwi
1/2 cup cubed honeydew melon
1/4 cup ginger ale
1/4 cup pineapple or orange juice
1/4 cup chopped fresh mint

Put all ingredients in a bowl, toss gently, cover and chill to ready to serve.

LIME MOJITOS
makes 1 gallon for a party


4 cups crushed ice
3 limes, thin sliced
1 cup fresh mint
12 oz. frozen lime concentrate
3/4 cup fresh lime juice
1/2 cup vodka
1/2 cup lime vodka
1 liter Sprite

In a large pitcher, combine ice, sliced limes, and mint. With a wooden spoon, "muddle" the mixture well. Add frozen Lime concentrate, lime juice, vodka, & lime vodka. When ready to serve, add the Sprite.

for 1 serving: get a tall glass, add crushed ice, 2 mint leaves and 1 lime slice, muddle with a spoon. Add 1 jigger of vodka, 1 jigger of lime vodka and fill with Sprite to the top. Now you are ready to cook!!
