I found this, haven't tried it, but maybe it is close to what you had.

EDMOND'S SPECIAL APPLE PIE

1 can sliced apples
1 c sugar
1/2 c light brown sugar
1 tsp lemon juice
1/2 tsp cinnamon
1/8 tsp nutmeg
2 tbsp cake flour
1 unbaked pie shell - 9 inch
1 tbsp butter
dash salt
1/4 c cream cheese
2 tbsp sugar
2 tbsp milk
1 egg
1 c shredded coconut

mix apple slices with the granulated and brown sugars, lemon juice, cinnamon, nutmeg and flour. pour into unbaked pie shell. dot with butter. cover with foil and bake at 425 for 35 min. (preheated oven)
meanwhile, prepare topping: mix cream cheese with sugar, milk and salt. beat the egg lightly then add to coconut. mix this withcream cheese mixture until well blended.
remove foil from pie. pour cream mixture over top. return to oven - 350* for abut 45 min. or until the topping is nicely browned.

notice the reduced oven temperature for the second baking period. This is described in the book as a pie with a coconut custard glaze.
