MERRY CHEESE CAKES
FOR THE CRUST:
1 cup all-purpose flour
1/2 cup Land O Lakes Sweet Cream Butter, softened
1/2 cup firmly packed brown sugar
1/2 cup chopped nuts
FOR THE FILLING:
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1 egg
2 tablespoons milk
2 tablespoons lemon juice
1/2 teaspoon vanilla
Preheat oven to 350 degrees F.
TO PREPARE THE CRUST:
In 3-quart bowl combine flour, butter, and brown sugar. Blend with mixer at low speed for 2-3 minutes, until particles are fine. Stir in nuts. Reserve 1 cup of mixture for topping; pat remainder in ungreased 8-inch square pan.
Bake near center of 350 degrees F oven for 8-10 minutes ro until lightly browned.
TO PREPARE THE FILLING:
In 1 quart bow, combine the ingredients for the filling; blend until smooth. Spread filling over partially baked crust. Sprinkle with reserved crumb mixture.
Return to oven for 23-30 minutes or until golden brown. Cool; cut into bars.
Store in refrigerator.
Makes 24-30 bars
