Recipe: Molasses Oatmeal Raisin Cookies (using whole wheat flour)

MOLASSES OATMEAL RAISIN COOKIES
1 cup butter, softened
3/4 cup sugar, divided use
3/4 cup molasses
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick cooking oats (uncooked)
1 1/4 cups raisins
1/4 cup sugar
2 teaspoons ground cinnamon
Preheat oven to 375 degrees F.
Beat butter and 3/4 cup sugar until fluffy. Mix in molasses, then egg and vanilla. Add flours, baking soda, salt, mixing well. Stir in oats and raisins.
Combine 1/4 cup sugar and cinnamon. Stir well.
Shape dough in 1-inch balls, roll in cinnamon/sugar mixture. Place 2 inches apart on cookie sheets.
Bake in a 375 degree F oven for 7-9 minutes until light brown.
