Recipe(tried): Merry Christmas and Baked Oatmeal Recipe
Breakfast and BrunchJust a quick post to say hello and wish you all a very Merry Christmas and a happy, healthy New Year! Thank you all for posting and sharing such delicious recipes. I have enjoyed so many of them, and I have learned so much from all of your cooking expertise.
I know this time of year is hectic for everyone, but it is starting to slow down now and I'm hoping for a relaxing Christmas Eve and Christmas Day. I'm making a turkey for Christmas, as we are having ham on Christmas Eve, and my family is not all that crazy about ham. I don't know what's wrong with them - I love ham! But they requested turkey, so turkey it is. I'm not going too overboard Christmas Day, because there is so much food here we are all starting to look like Roly-Polys. However, Christmas morning I always make my Christmas Morning Rolls, which I'm pretty sure I posted here before, but if anyone wants the recipe I'll be happy to repost. They are my favorite - super easy and delicious. With that we are having fruit salad and Baked Oatmeal. This is a delicious hot oatmeal casserole that tastes like a warm cinnamon oatmeal cookie. I make it all winter long, and we love it.

BAKED OATMEAL
1/3 cup butter
2 eggs
3/4 cup brown sugar, packed
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1 1/2 tsp. cinnamon
1 tsp. grated nutmeg
1/4 tsp. salt
1/3 cup raisins
1 cup plus 2 TBSP. milk
3 cups quick-cooking oats (NOT INSTANT)
Warm milk or cream for passing at the table
Melt the butter and set aside.
Grease a 1-1/2 quart casserole dish. Drop in the eggs and beat them slightly. Add the brown sugar, baking powder, vanilla, cinnamon, nutmeg, and salt. Mix well, and make sure there are no brown sugar lumps. Whisk in the melted butter and the milk. Stir in the oats and raisins.
At this point, you can either cover it and refrigerate it overnight, or you can proceed and bake. It's good either way!
Preheat the oven to 350 degrees F. Bake the oatmeal, uncovered, for 35 minutes or until the top is starting to brown. Remove from oven. Spoon into bowls and pour warmed milk over the top. This is comfort food, believe me!
