This is a very easy and good recipe. We make it every year at Christmas. You can substitute any sort of nut that you want.
Microwave Pecan Brittle

1/2 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup light corn syrup
1 1/2 cups pecans
2 tablespoons butter or margarine
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
Grease a cookie sheet and spatula with butter or margarine. Combine sugars and corn syrup in a large microwave bowl (it will boil up pretty high). Microwave, uncovered, on high for 4 min. Stir in nuts, butter and salt. Microwave 4 more min. Remove from microwave and quickly stir in soda. It will become light and foamy. Quickly pour onto prepared cookie sheet, spreading thin. When cooled break into pieces and store in air tight container.
For an extra treat add 4 tbl chopped pickled jalapeno and a few drops of green food coloring when you add the nuts. This makes a good Christmas present.
