Recipe: Microwave Swiss Steak

MICROWAVE SWISS STEAK

2 lb beef, boneless round steak
1/4 cup flour
1 tsp salt
1/4 tsp pepper
1 cup celery, thinly sliced
1 medium green bell pepper, thinly sliced
1 medium onion, thinly sliced, separated into rings
1 can condensed tomato soup
2/3 cup water
1 tbsp Worcestershire sauce

Trim round steak; pound well. Cut into 6-8 even size pieces.

Mix flour, salt, and pepper, and coat beef with it. Place beef and any remaining flour mixture in rectangular baking dish, 12x18-inches or 10-inch square casserole.

Combine celery, onion, and green pepper in small bowl, microwave on high (100%) until are tender 3-5 minutes. Mix with remaining soup, water, and Worcestershire and pour over beef.

Cover and microwave on high (100%) five minutes. Reduce power to medium (50%) and continue to microwave until beef is tender, 40-50 minutes, re-arranging pieces after half the cooking time.
