Recipe: Mini Cheesecake Ideas

Dear Martin,

If you don't want to turn your cheesecakes upside-down you could use paper liners in the pan. If you want a top-and-bottom crust, I would make rounds of the crust mixture on a cookie sheet the size of the top of the cheesecakes and bake them until firm and lightly browned. You can 'glue' them to the tops (or bottoms) of your cheesecakes using a thin layer of jelly or sour cream that's been sweetened with a little sugar. Or you could pipe some whipped cream on the cheesecakes and maybe add a fresh strawberry and set the crust round at an angle on the top giving a peek at what's underneath.
