COOL LIME PIE WITH TEQUILA
1 (14 oz.) can sweetened condensed milk
1 Tbsp. grated lime zest
1/2 cup freshly squeezed lime juice*
3 Tbsp. tequila
1/4 tsp. salt
1 packaged or prebaked graham cracker crust
Whipped cream and slices of lime (optional, for serving)
In a medium mixing bowl, using an electric mixer set on medium speed, beat together the condensed milk, lime zest, lime juice, tequila and salt. Set the filling aside for about 5 minutes, until slightly thickened.
Pour filling into the crust, cover with plastic wrap or aluminum foil, and refrigerate for at least two hours, or overnight.
Serve pie cold, garnished with whipped cream and lime slices, if desired.
*Do not use bottled lime juice.
Makes 1 (9-inch) pie, or about 8 servings
