MINTED GREEN TEA JELLIES
4 teaspoons unflavored powdered gelatin*
4 tablespoons plus 2 cups water, divided use
1/4 cup sugar
1 teaspoon green tea powder (available at Japanese markets)
12 fresh mint leaves
FOR SERVING:
2 kiwifruit, peeled and finely diced**
Juice of 1 lime
In a cup, sprinkle gelatin over 2 tablespoons cold water and let stand until absorbed, about 3 minutes.
Heat in microwave for 20 seconds or in a small saucepan over low heat on stove top for about 1 minute to dissolve. Stir to ensure that gelatin is fully dissolved.
In large bowl, combine sugar and green tea powder. Stir in 2 tablespoons water to form a paste.
In saucepan, bring 2 cups water to boil and pour over mint in heat-proof bowl. Let stand 2 minutes, then strain and add mint-flavored water to tea paste along with gelatin mixture. Discard mint. Stir until sugar is completely dissolved.
Divide mixture among four (1/2 cup) serving glasses or bowls. Chill until set, about 5 hours, stirring several times before mixture sets to prevent separating.
TO SERVE:
Just before serving, garnish with diced kiwifruit and drizzle with a little fresh lime juice.
*These jellies are set very softly. If you prefer a firmer set, increase the amount of gelatin.
**Kiwifruit contains an enzyme that prevents setting, so don't garnish jellies until ready to serve, or they will break down.
