Recipe: Miss Opal's Fresh Apple Slaw (1970's)

MISS OPAL'S FRESH APPLE SLAW

4 1/2 cups (about 1 1/2 pounds) red apples, peeled, cored and thinly sliced
4 cups shredded green cabbage
1 cup dairy sour cream
3 tablespoons vinegar
1 tablespoon sugar
3/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon poppy seed (or celery seed), optional

Combine apples and cabbage in a large salad bowl.

In another bowl combine sour cream, vinegar, sugar, salt, pepper and poppy seed.

Pour the dressing over the apples and cabbage and toss lightly. Cover with damp paper towels and chill at least 1 hour before serving.

Makes 6-8 servings
