I have been holding on to my three Missouri cookie recipes for over 30 years! My mom got them from her cousin from Kansas in the late 1960s. I love all three of them!
Here is the one with coconut.
2 cups sugar
1/2 cup milk
1/2 cup shortening
3 cups quick oatmeal uncooked
6 TBSP unsweetened cocoa
1 cup grated coconut
1 tsp. vanilla
1/2 tsp salt
Mix sugar, milk, shortening in saucepan. Bring to boil and remove from heat. Add rest of ingredients and drop onto wax paper. Let cool and enjoy!
