MOCK MIRACLE WHIP
Makes slightly more than one quart
4 egg yolks
6 tbsp. vinegar
1 tbsp. plus 1 tsp. salt, divided use
2 tbsp. plus 1/2 tsp. sugar, divided use
3 cups salad oil, divided use
1 cup water
3 tbsp. flour or cornstarch
2 tsp. dry mustard
With mixer blend egg yolks, 2 tablespoons vinegar, 1 teaspoon salt, and 1/2 teaspoon sugar.
Very slowly add 1 cup of the oil, a few drops at a time and mix thoroughly.
Add the remaining oil a little faster but be careful to blend each addition before adding more oil. When all the oil has been added add the remaining 4 tablespoons vinegar.
Bring 1 cup water to a boil in a saucepan.
Add flour or cornstarch and dry mustard and cook, while stirring, to a smooth paste.
Add this hot mixture to the egg mixture and blend well. Pour into a container and cool in the refrigerator.
SALAD DRESSING
3/4 cup oil
1/3 cup lemon juice
1 egg
1 1/2 tbsp. sugar
1 1/2 tsp. salt
1/8 tsp. paprika
1 cup water, divided use
4 tbsp. cornstarch
Mix together oil, lemon juice, egg, sugar, salt, and paprika; set aside.
Bring 3/4 cup water to a boil in a saucepan.
Mix cornstarch with the remaining 1/4 cup water. Add to boiling water and cook, while stirring, until the mixture is clear.
Stir the oil mixture into the cornstarch mixture and cook until the egg is fully cooked. Remove from heat and cool to room temperature.
Pour dressing into blender container and blend until smooth.
SALAD DRESSING (using 1/2 cup sugar)
1/2 cup water
3 tbsp. cornstarch
1/4 cup cold water
2/3 cup oil
1/2 cup sugar
1/3 cup vinegar
1 egg (egg beaters/pasteurized egg product to equal 1 egg)
1 tsp. dry mustard
1 tsp. salt
Bring 1/2 cup water to a boil in a medium-size saucepan.
Stir together the cornstarch and 1/4 cup cold water until well blended. Add to the boiling water and cook until thick.
In a blender whip together the oil, sugar, vinegar, egg, dry mustard.
Add cornstarch mixture to blender mixture and whip until thick like Miracle Whip. Store in refrigerator.
