Salads - Salad Dressings
SWEET SOUTHERN DRESSING

1 1/2 cups sugar
2 teaspoons Dijon mustard
2 teaspoons salt
3 tablespoons chopped onion
2/3 cup apple cider vinegar
2 cups salad oil
3 tablespoons poppy seeds (or chopped pecans)

Place sugar, mustard, salt, onion and vinegar in a food processor or blender and process until smooth. Add oil in a steady stream. When thick, add poppy seeds or pecans.

This dressing will keep several months, covered, in the refrigerator, if the mixture separates, return it to the processor or blender and re-mix.
