Recipe(tried): Monday Night Supper - London Broil with Onion Gravy (crock pot), Steamed Broccoli with Red Pepper Slices

Hi! We have been on the move for the past two Sundays so I haven't even cooked! Last Sunday we were moving Kristin to Tuscaloosa. Yesterday was our anniversary so we went to our favorite seafood place in Bagdad, near Pensacola.
I had my usual--grilled scallops, shrimp, and grouper. It was a really delicious meal!
Tonight for supper I used my old standby--the crockpot. Tonight we had: London Broil with Onion Gravy, no-yolk noodles, steamed broccoli with red pepper strips, sliced tomatoes, fresh peaches, and sweet tea with lemon.
The London Broil couldn't have been easier. It was so nice to come home to the meat portion of the meal already cooked!
LONDON BROIL WITH ONION GRAVY
1-2 lbs. London broil, cut into serving pieces
1 can Swanson Beef Broth with Onions
1 red bell pepper, sliced thinly
2 yellow onions, sliced and separated into rings
2-3 Tbsp. soy sauce
1 Tbsp. balsamic vinegar
black pepper
2 Tbsp. minced garlic
1 pkg. mushrooms, cleaned and sliced
In a large crockpot, spray the inside with PAM. Put half of the vegetables on the bottom of the crockpot. Put the London broil on top of the vegetables. Put the rest of the vegetables on top of the meat. Combine the soy sauce, beef broth, balsamic vinegar, and garlic. Pour over the meat/vegetable mixture. Sprinkle with black pepper. Cook on LOW for 8-10 hours.
ONION GRAVY
1 can golden mushroom soup, undiluted
1/2 can "drippings" from the crockpot mixture
Combine the two ingredients and heat until warm. Serve over meat and noodles.
STEAMED BROCCOLI WITH RED PEPPER SLICES
1 bunch of broccoli, separated into florets
1 red bell pepper, sliced thinly
seasoned salt
dash of sugar
2 Tbsp. olive oil
Place broccoli in a saucepan adding bell peppers, salt, sugar, and olive oil. Pour 1 1/2 cups water over the broccoli. Cook on simmer for 20-25 minutes or until broccoli is done.
