Recipe: Twenty Minute White Bean Chili (using ground turkey, stewed tomatoes and Dijon mustard)

1 cup chopped onions
1 clove garlic, minced
1 tablespoon vegetable oil
1 pound ground turkey
1 cup chicken broth
1 (14 1/2 ounce) can stewed tomatoes
1/3 cup Grey Poupon Dijon Mustard
1 tablespoon chili powder
1/8 teaspoon ground red pepper (or double)
1 (15 ounce) can cannellini beans, rinsed and drained
1 (8 ounce) can whole kernel corn, drained
tortilla chips
shredded cheddar cheese
Cook and stir onions and garlic in oil in a 3-quart saucepan over medium-high heat until tender. Add turkey; cook until done, stirring occasionally to break up meat. Drain.
Stir in chicken broth, tomatoes, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn; cook for 5 minutes. Serve topped with tortilla chips and shredded cheese if desired.
