Recipe: Morning Glory Muffins

This is the current recipe I want to compare with others and, from that process, create my own favorite recipe for muffins I really love. I welcome as many recipes as anyone cares to share because this is a fascination at the moment. They vary *wildly* (in amounts, if not ingredients) and I get excited by ideas I've never thought of. The key ingredients are: apple, carrot, cinnamon, raisin .. sometimes zucchini, other dried fruit or fruit sauces. I am interested in all recipes (high-low fat, etc.) with the intention of creating my own ultimate very low-fat version with a few variations. Here is one I love but find a bit too sweet and oily for my taste and dietary preference, as written. The muffins are, however, *delicious*!

MORNING GLORY MUFFINS
(from "Parenting" or "Parent" magazine .. sorry, I forgot the name .. notes in () are Janet's)
Makes 24 muffins

2 c. peeled, diced apples (3) (large dice)
2 c. grated carrot, zucchini or combo (4-6 carrots = 2 c. ... combo is better, had no zucc)
3/4 c. sugar (1/2 + 1/4) (used less but missed the sweetness, try 1/2 c. + 2 T.)
2 lg. eggs, lightly beaten (or 4 egg whites)
1/2 c. veg. oil (too oily .. try 1/4 c. and/or applesauce)
2 t. vanilla ext.
2 c. a-p flour
2 t. baking soda (other recipes say 1 t. bs, 1 t. bp)
2 t. cinnamon (yes .. a lot, but good!!)
1 t. salt
1 c. raisins (really need these for sweetness if cut down on sugar)

Preheat to 325, grease tins.

In large bowl, combine apples, vegetables, sugar.Add eggs, oil (and/or applesauce), vanilla .. blend.In another bowl, combine dry ingredients. Mix dry into wet, add raisins.

Fill cups 2/3 full and bake 25 minutes.

made 6 muffin tops and 6 large scoops. They were so big (like hamburger buns) I'd make smaller ones next time and bake for 15-20 minutes. DELICIOUS!!!!!
