MOUSAKAS PATATES (MOUSSAKA POTATOES)
3 pounds potatoes
1 2/3 cups oil (or as needed)
salt and pepper to taste
1/2 cup chopped onion
1 1/2 pounds tomatoes, scalded, peeled and strained or (OR 1 1/2 tablespoons tomato paste diluted with 1 cup water)
1/2 cup chopped fresh parsley
80 milliliters garlic
1 cup grated cheese, divided use
bread crumbs
Clean and peel potatoes; cut into thin round slices. Fry in oil, then season with salt and pepper. Remove the potatoes from the pan; set aside.
Saute onion to a light golden color in the pan in which you fried the potatoes.
In a saucepan, combine the onions, tomatoes (or paste with water), parsley, garlic, and salt and pepper; cook about 20 minutes, until you have a thick sauce. Remove from heat.
Preheat oven to 375 degrees F.
Add to the sauce 3/4 cup of the cheese and 3 tbsp. bread crumbs.
Oil a medium-size baking pan lightly. Spread layer of the potatoes in it; cover with part of the sauce. Top with another layer of potatoes and sauce. Repeat until all is used; sprinkle with remaining 1/4 cup cheese and additional bread crumbs; dribble a little oil over the top.
Bake in preheated oven at 375 degree F. for about 30 minutes.
