HALUSKI
POTATO DUMPLINGS WITH CABBAGE
This is a traditional Slovak dish that is often served on Christmas eve.
FOR THE POTATO DUMPLINGS:
6 to 8 potatoes, peeled and blended into a paste
2 1/2 cups all purpose flour
2 eggs, beaten
salt and pepper to taste
6 cups boiling water
FOR THE CABBAGE:
2 heads cabbage, chopped into 1/4 x 1-inch strips
1 to 2 tablespoons salt
2 onions, chopped
1/2 lb butter
Mix potato paste, flour, eggs, salt, and pepper until it has a doughy consistancy.
Spoon teaspoonfuls of mixture into boiling water and allow to cook for 2-3 minutes. Scoop out with slotted spoon and allow to drain.
Salt cabbage with 1 to 2 Tablespoons of salt.
Cook onions in butter until they are transluscent.
Add cabbage and cook until tender on medium low heat. Add potato dumlings and simmer until warm.
