Mushrooms Stuffed with Herb Cheese

from Weight Watshers Meals in Minutes Cookbook

16 medium mushrooms
3 Tbsp whipped cream cheese
1 Tbsp chopped fresh parsley
1 Tbsp fresh chopped basil or 1/2 tsp of basil leaves
2 tsp grated parmesan cheese
1 clove of garlic
2 tsp plain dried bread crumbs
1/4 cup water

-Heat oven 450
-remove stems from mushrooms and chop, reserve the caps
-in a small bowl combine chopped mushroom stems, cream cheese, parsley, basil, parmesan cheese and garlic with a fork, mix well
-fill each reserved mushroom cap with the mixture (about 1 tsp each)
-arrange in a 8x8x2" baking pan
-sprinkle an equal amount of bread crumbs over top
-pour 1/4 cup water into the bottom of the pan and bake until the mushrooms are fork-tender and lightly browned, about 10 minutes

makes 4 servings of 4 mushrooms each

I have doubled and tripled this recipe, it works well. I find larger mushrooms easier to work with.
