Recipe: Roll Your Own Manicotti (using lasagna noodles) (Prince Macaroni)

(Using bread crumbs in the cheese filling)
1/2 lb. Prince Curly Lasagna (No. 14)
1 lb. ricotta or cottage cheese
1/4 lb. mozzarella or American cheese, shredded
1/2 cup flavored bread crumbs
1/4 tsp. salt
1/4 cup chopped fresh parsley
1 egg, slightly beaten
1 (1 pint) jar Prince Meat Spaghetti Sauce, heated
1/4 cup grated parmesan cheese
Cook Lasagna according to package directions. Drain and cut Lasagna strips in half.
Mix cheeses, bread crumbs, salt, parsley and egg. Spoon some of mixture on each lasagna strip and roll.
Pour of meat sauce into shallow casserole and arrange a single layer of rolls on top. Add remaining sauce, sprinkle with grated cheese.
Bake at 350 degrees F for 15 minutes or until bubbling hot.
Serves 4-6

Hi Sher,
I have a couple of old Prince Macaroni recipe booklets and this is the only other manicotti recipe I found. If you want to experiment with it, you could use manicotti shells and substitute Romano for the parmesan. I haven't made cheese manicotti filling with bread crumbs in it, that sounds interesting.
