Recipe: Coconut Cream Eggs (using apple juice concentrate, no added sugar)

COCONUT CREAM EGGS

1/2 cup soft cream cheese
1/4 cup frozen apple juice concentrate, thawed
1 cup unsweetened coconut
1/4 tsp. almond extract (or vanilla)
3 to 4 tbsp. non-instant skim milk powder

Cream all ingredients to form a moldable dough. With moistened hands, form into egg shapes. Cover and refrigerate overnight until firm.

These candies should be refrigerated between servings. These eggs can be dipped in chocolate or carob.
