Mustard Artichoke Hearts (Corazones de Alcachofa a la Mostaza)
Betty Crocker's Mexican Cookbook.Recipes by Jose' Leopoldo Romero
Serves: 6

1 small onion,chopped(about 1/4 cup)
2 Tbls.margarine or butter
2 Tbls.brandy
1 clove garlic,finely chopped
1 Tbls.prepared mustard
1/2 tsp.ground cumin
1/2 tsp.salt
1/8 tsp.pepper
2 cans(14 oz.each)artichoke hearts*,drained & cut into halves
1/4 c.snipped parsley

Cook & stir onion in margarine in 10 inch skillet over medium heat till tender.Add brandy,simmer uncovered 2 minutes.Stir in garlic,mustard,cumin,salt & pepper,add artichokes.Simmer uncovered,stirring occasionally,5 minutes.Stir in parsley.

*2 pkgs.(9 oz.each) of frozen artichoke hearts can be substituted for the canned.Cook as directed on package.
