Recipe: Fresh Corn and Pepper Fritters

FRESH CORN AND PEPPER FRITTERS

2 egg yolks, beaten
1 1/2 cups grated fresh corn-on-the-cob*
1/2 cup finely chopped sweet bell pepper
1/4 cup flour
1/2 teaspoon salt
Pinch of ground black pepper
3 egg whites

In a medium bowl, combine all ingredients except egg whites and mix well.

In small bowl of electric mixer, beat egg whites until stiff; fold egg yolk mixture into egg whites.

Drop by heaping tablespoons onto lightly greased preheated skillet or griddle. Cook over low heat 3 or 4 minutes until brown on bottom; turn and brown other side.

*To grate fresh corn:
Place 4-sided grater in large bowl. Grate corn over largest grate. Measure corn and all liquid for this recipe.

Makes 1 dozen fritters; 4 servings
