Recipe(tried): My Mother's Minestrone Soup

MINESTRONE SOUP

4 slices bacon, cut in small pieces and fried
Chop fine the following:
2 sprigs parsley
1 small garlic section
1 medium onion
1 medium carrot

1/3 can spinach crained and chopped. Could also use fresh
1 Cup shredded cabbage
1 can (med) solid pack tomatoes
1 teaspoon salt
1 tsp oregano
up to 1 pint of stock made from boullion cubes and 2 cups water
1 can consomme
1 can boullion
1 can water

Leave the bacon in the fat (this is an old recipe so I would pour most of it out) Add the vegetables and simmer on low about 10 minutes. Add the tomatoes, salt, oregano and the stock. Cook for about 1 to 1 1/2 hours. Add the consomme, boullion, and water. Sprinkle parmesian cheese on top or float toast on top. Spaghetti may be added if desired.
