Here's my Nana's recipe for Apple Cake. She was an old Pennsylvania Dutch lady with 2 apple trees in her backyard, and I have fond childhood memories of this treat. This is an old recipe, so you may want to figure out how to cut down on the high amount of oil. For me, I can't bear to change her recipe:
NANA'S APPLE DAPPLE CAKE
4 cups sliced raw apples
2 cups sugar
1 cup oil
3 eggs
2 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
Peel and slice apples into thin slices. I prefer to use a mandoline slicer for uniformity. Place apple slices in a glass bowl. Cover with water and add a splash lemon juice so the apples won't brown.
Mix sugar and oil BY HAND in a large bowl. Add eggs one at a time until incorporated. Add vanilla; stir.
In a separate bowl, add flour, salt, baking soda, and cinnamon. Add flour mixture to sugar mixture in increments until incorporated. Do not over mix.
Drain the apples well, and add to mixture carefully, trying not to break up the apples too much. Pour into a 13x9-inch ungreased pan.
Bake at 350 for 30-40 minutes. During the last 10 minutes of baking, in a saucepan, combine the following:
1 cup light brown sugar
1/4 cup cream or milk
1/4 cup butter
Boil 4 minutes.
When the cake is done, remove from oven and turn on the broiler.
Pour sauce over cake and return to oven. Broil 2-3 minutes, or until sauce is bubbly. Remove and cool.
