MOCK FRIED ONION RINGS
1 large onion, cut into 1/4-inch slices; separated into rings
1/2 cup fat free milk
3/4 cup plain dried bread crumbs
1 teaspoon chili powder
1/2 teaspoon salt
Nonstick vegetable spray
Soak the onion slices in milk for 30 minutes turning frequently.
Preheat oven to 450 degrees F.
Combine dry ingredients in plastic bag.
Drain onion rings and shake in bag to coat with seasoning. Place coated rings on lightly greased jelly roll pan. Spray coated rings lightly with vegetable spray.
Bake 5 minutes on each side.
Makes about 4 servings
