NO-BAKE LEMON PIE
3/4 cup (one 6 oz. can) lemonade concentrate, softened
1/4 cup water
1 (3 ounce) package lemon Jell-O
1/2 cup sugar
1 cup undiluted Carnation Evaporated Milk
1 (9 inch) graham cracker shell (recipe follows)
Mix lemonade concentrate with 1/4 cup water. Reserve 2 tablespoons of this mixture; heat remainder. Dissolve Jell-O and 1/2 cup sugar in heated concentrate. Chill until thickened and syrupy (20-25 minutes).
Meanwhile, chill evaporated milk in refrigerator tray until soft crystals form through milk (15-20 minutes).
Whip chilled evaporated milk until stiff (about 1 minute); add reserved 2 tablespoons lemon concentrate. Continue whipping until very stiff (2 minutes longer).
Fold whipped evaporated milk into chilled lemon Jell-O mixture. Spoon into crust. Chill pie 2 hours, or until firm.
GRAHAM CRACKER SHELL:
Mix 1 1/2 cups crushed honey graham crackers with 2 tablespoons sugar and 1/4 cup melted butter. Line sides and bottom of 9-inch pie plate.
Makes 1 (9-inch) single crust pie)
