Recipes for Easy Chewing and Safe Swallowing
For People with Chewing and/or Swallowing Problems, Who Are at Home
By Maxine Dereiko, R.D., L.D. and Elaine Teutsch, R.N., M.S.

Beefsteak

Take 1 small 1 1/2 inch thick fillet -- Tenderloin of Beef
Place on broiling pan with oven rack on 2nd rung down
Broil just to medium doneness (5 minutes one side and 3 minutes the other .)
Cut in pieces and puree in food processor.

We assure you this will taste wonderful with no chewing, a very smooth puree. However, you can't cook it more than medium doneness and still make a smooth puree. It must be a good grade of meat.

If you need to have it thinner, plan ahead and boil a piece of beef so that you have some
home-made broth to add to the puree. Canned broth or dissolved bouillon will work, of
course, but won't taste as good.
