Recipe(tried): No Egg Pasta

NO EGG PASTA (pasta fresca)

3 cups semolina flour
1 tsp salt
2 tbsp olive oil
1 cup warm water

Sift flour onto board, make center well, add salt, olive oil and small amount of water. Slowly mix, bringing flour from around edges, kneading together. Add more water if needed. Continue kneading until dough is formed into a smooth ball. cover dough with a bowl and let rest 10 min. knead dough until smooth and elastic. Recover with bowl and let rest 15 min. Divide dough, roll thin or use pasta machine. Dry for 1 hour before cooking.
