NOEL NUT BALLS
2 sticks unsalted butter, at room temperature
2 tablespoons honey
1/2 cup confectioner's sugar (plus additional for rolling)
2 1/4 cups sifted all-purpose flour
1/4 teaspoon salt
1 teaspoon bourbon (or orange juice)
3/4 cup finely chopped pecans
Cream butter and honey together in a mixing bowl until soft and fluffy. Stir in the confectioner's sugar, flour, salt, bourbon or orange juice, and pecans. Chill for several hours.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F. Grease cookie sheets.
With your hands roll 1 teaspoon of dough at a time into balls the size of small walnuts. Place on prepared cookie sheets.
Bake for 12 or 13 minutes. Place on wire racks to cool.
When cool roll in confectioner's sugar.
Makes 36 small nut balls
